Muraki
A moment to unwind in the city.
At Muraki in Saiin, Kyoto, diners can savour distinct white and black juwari buckwheat noodles, crisp sakura shrimp fritters, and savoury dipping broths featuring Iberico pork and duck in a calm setting.
01 / ABOUT THE PLACE
Open the menu, and the first choice to make is between white and black buckwheat noodles. The white offers an elegant, clean glide down the throat, while the black, ground with the whole grain, releases a deep, earthy aroma. Both are made entirely of buckwheat flour and sliced into delicate, thin strands. For those torn between the two, ordering a two-colour serving brings both varieties to the table on a single tray. Because these delicate noodles soften quickly, the customary approach is to pick up your chopsticks the moment they arrive.
Beyond the classic dashi dipping broth, Muraki distinguishes itself with an imaginative array of warm dipping sauces. Options range from rich white miso simmered with tender Iberico pork to broths infused with the gamey depth of Kyoto duck, venison, or wild boar, each designed to draw out the soba's natural flavour. At lunchtime, the Hiruzen set rounds out a cold zaru soba with tempura, traditional Kyoto obanzai side dishes, and rice cooked with fragrant steeped buckwheat tea grounds, showing the kitchen's generous range.
Among the side dishes, the sakura shrimp kakiage fritter stands out for its light, crisp texture and concentrated seafood aroma. The seasonal menu also features tempura, vinegared mackerel sushi, and soft, warm sobagaki buckwheat dough dumplings, making it easy to linger over a beer or a carafe of sake before concluding with noodles.
With tables alongside a modest counter run against the wall, the dining room provides a quiet, focused retreat for enjoying buckwheat noodles. The meal naturally draws to a close as hot, starchy cooking water is poured into the remaining broth to sip. Note that payment is accepted only in cash, so it helps to have notes on hand before visiting.
